Monday - all general - 9:30 pm eastern time
Wednesday - this and that - 8:30 pm eastern time
Some Fridays (there is a schedule, but I don't know what it is) for Mono, Survivor, or special games - 8:30 pm eastern time.
Other games are most nights after about 8:00 eastern time. You can just pop in and join the players there.
